How many species of coffee are there?

and what do cultivators do with the fruit?

Myself, I couldn't tell you how many species of coffee there are. I am not a coffee maven or expert. My knowledge is limited here. Also, what do the coffee farms do with the fruit. the cherry that surrounds the seed, or coffee bean. I know very little. I don't roast coffee, nor market coffee. Nor do I consider myself a coffee connoisseur.  I am basically a coffee sewer, however. Lots of coffee goes in. That is magically turned into, then expelled, as mostly water.
